Notes on the Producer. This wine is made from a rigorous selection from vineyards over 25 years of age, harvested during the first week of October. After vatting, the grapes were left for three days at a low temperatura, enabling all the aromas of the Monastrell variety to be drawn out. Fermentation was conducted at a temperatura of 25ºC. After de-vatting, the wine was transferred to new barrels where it aged for three months to acquire the smooth, elegant taste of oak.
